Easy Chocolate Pots De Crèmes

Ingredients
  

  • 7 oz bakers chocolate finely chopped
  • 1 can coconut milk 14 oz
  • 2 tbsp white sugar
  • 1/2 tsp vanilla extract

Equipment

  • 1  Knife
  • 1 blender
  • 1 pan
  • 4-6 mini jars or ramicins

Method
 

  1. Chop chocolate and place in a blender.
  2. In a pan, bring coconut milk to a simmer on low to medium heat. Stir constantly.
  3. Once simmering, pour into blender with sweetener and vanilla. Whiz up until smooth and pour into 4-6 containers - mini ramekins, or small jars.
  4. Let cool for 20 mins then cover and place in the fridge for 4-6 hours to completely set.
  5. When ready to serve, let sit at room temperature for 5 mins. Top with whipping cream or ice cream and chocolate shavings.
