Method
- Chop chocolate and place in a blender.
- In a pan, bring coconut milk to a simmer on low to medium heat. Stir constantly.
- Once simmering, pour into blender with sweetener and vanilla. Whiz up until smooth and pour into 4-6 containers - mini ramekins, or small jars.
- Let cool for 20 mins then cover and place in the fridge for 4-6 hours to completely set.
- When ready to serve, let sit at room temperature for 5 mins. Top with whipping cream or ice cream and chocolate shavings.
